Jersey Bite of the Week: Saffrons at the Hotel de France

 

A unique blend of healthy recipes, Indian spices, and contemporary European presentation, Saffrons Restaurant serves up a menu peppered with locally sourced ingredients, served in various styles inspired by the different regions of India, all served in luxury four star surroundings.

Saffrons is situated on the first floor of the four star Hotel de France, on the outskirts of Jersey’s town centre. Diners are treated to panoramic views of St. Helier and the sea beyond, with the hotel terrace and neighbouring lounge bar providing perfect spots for a pre-dinner drink and a post-dinner coffee.

The concept behind Saffrons Restaurant involves healthy food and light dishes that stimulate diners’ taste buds with interesting and unique spices, rather than overwhelming ingredients with heavy garnishes and sauces. The chefs in the Saffrons kitchen aim to maintain the intense flavours that result from Indian cooking techniques and Asian recipes, all the while ensuring that dishes are clean and fresh.

A Focus On Local

Local produce features heavily on the Saffrons menu, especially fish and seafood from Jersey’s waters and locally grown vegetables. This focus on seasonality means that the menu constantly offers ingredients at their peak, whilst also supporting local food suppliers and reducing food miles. Dishes are cooked in a range of Indian styles, including fresh seafood recipes from Goa and richer Punjab dishes from the north of India. Authentic Tandoor ovens are used next to modern cooking techniques such as slow cooking and water baths, all creating an innovative menu that showcases original and authentic food.

Fish dishes are the stars at Saffrons, with highlights including locally caught seafood broth flavoured with saffron and served with crab tortellini, line-caught seabass with coconut vanilla foam, marinated gilt head bream with kaffir lime leaves, and Jersey lobster cooked in various Kerala styles. It’s a brave chef that changes the traditional butter-and-mint standard of Jersey Royal potatoes, but Saffrons manages to offer something tasty and intriguing with their cumin and garlic-flavoured spuds.

More traditional Indian dishes such as freshly made Tandoories and authentic Nann breads are also served, with desserts gathered around a signature sweet dish of trio of chocolate, rasberry and pistachio.

In contrast to the varied and colourful combinations on the menu, Saffrons’ décor pairs slight formality with cool, white-washed walls and tall window shutters. The relaxed atmosphere and top quality service combine with intensely flavoursome dishes to create a one-off in Jersey; interesting, tasty, modern yet classic, and perfect for a special occasion.
